I recomend Hacking linux exposed by Brian Hatch as a very good Linux security primer - its about $80 at dymocks in town.
Securing & Optimizing Linux is avalible online as a pdf - its pretty good aswell:

For firewalls - cisco pix and checkpoint fw1 seem to be popular and obviously various linux and *BSD based ones
Also check out snap gear firewalls - they run embedded linux, do ipsec and pptp vpn - they are very full featured and supporting them supports linux - it uses cULinux - some of the snapgear changes to the cUlinux kernel have been rolled back into the current development kernel. The features on these are equivalent to MUCH more expensive ciscos (eg cisco make you pay much more for 3DES while its default on the snapgear)
