strings /dev/xxxx | grep knownword

?

or do these filesystems chop it up into little bits?

I guess you'd want to ask grep for a few context lines too.

... my test (reiserfs) certainly brought up some useful looking content,
though I'm not sure if they were existing files or not. My test string was
there, but I guess "The quick brown fox jumps over the lazy dog" could
exist in a live file somewhere.
