I do things the reverse way, but maybe this will help in your search.

To set Evolution to open URLs in mozilla/firefox/whatever:

  gconftool-2 --set /desktop/gnome/url-handlers/http/command -t string 'mozilla %s'
  gconftool-2 --set /desktop/gnome/url-handlers/https/command -t string 'mozilla %s'


I'm not using the Gnome desktop either. Hope this helps (somehow)...
