I definitely concur - two screens means independently switchable virtual 
desktops. There's only a practical limit but to give you an idea, I have 
eight virtual desktops on each 'screen' (of which I have two) so I have 64 
possible desktop combinations. One for firefox, one on each side for 
emacs, one for cross-compilation, one for email, etc. You get the picture. 
You cannot move an application between screens (unless it's a special 
Gnome app....). Both monitors are driven by the one nvidia gfx card. 3D 
OpenGL etc works fast and fine.

The 'other' dual-head desktop configuration is called Xinerama but it's 
not very useful. Both screens have to change at the same time (it's 
effectively a double-width desktop) and the only thing it gains you over 
my method is the ability to move windows between screens, or have a window 
span both screens (giant movie?).

So, it depends on what you want to do.
