Sometimes you are just plain out of luck.

However, you can try running  evolution from the command line,
preceded with LC_ALL=en_nz, LC_LANG=en_nz or similar.

e.g. LC_ALL=en_nz evolution &

That should force evolution to use the NZ locale, including our
date/currency/language conventions, if it is possible to do so in
evolution.
