I believe gam_server is part of Gamin, a handy system to notify
applications when files change. Depending on the kernel it might be
polling all the files it has to check to see if they're updated. You
could do several things
 - Upgrade your kernel to one with inotify support so polling isn't needed
 - Find the application that uses gamin and get it to stop monitoring
so many files
 - Stop gamin and hope nothing breaks
