I helped Lindsay out and solved this problem, posting the fix here for
reference. :-)

Looking in your apache log, I found an error that squirrelmail had tried
to use more than the maximum 8MB of system RAM allowed for a PHP script
- most likely due to the size of the mailbox or number of messages.

I boosted the max RAM for PHP scripts to 32MB and the problem has been
resolved.

PHP settings are configured in /etc/php.ini. If you make any changes,
you need to then reload apache (service httpd reload) to apply the
changes.
