You'll want a 'persistent' install to save your own data (inc new apps).
Easiest to have a trawl through http://www.pendrivelinux.com/
Another tip - have a google about and be selective in your choice of USB drive.
The read/write rates vary considerably by brand and model. I've found that
(generalising) cheap = slow. That said, as usual there are a few that do hit
the sweet spot. Tempting as the pricing may be, believe me when I say you don't
want a slow one!
