No - the UUID won't be restored in fstab, but that shouldn't matter at all. If you can mount /dev/hda6 OK, then if it's in fstab as /dev/hda6, when you boot it should mount up OK under /home and away you go. That being said, there must be a reason that the UUID got fruity in the first place so it would be wise to take a full backup asap.
