Hi Edouard,

For installing the catalyst drivers see 
https://wiki.debian.org/ATIProprietary

SteamOS is based on Debian Wheezy, so yes - steam will work on debian 
and debian Jessie (testing) has steam in the non-free repository so you 
don't even have to rely on external packages.
