Recent Ubuntu provides the guest account with reset at logout.
>From what I remember, it creates a temporary home directory at login then delete the tree at logout.
This should take care of you guest account need.

For consistency, what we do is standard installation plus post installation script for customisation (remove software market and ads , ...)  This is simple enough for us and we don't have to manage the puppet infra. It really depends on the number of computers and the frequency in between reinstall.

For fileshare, the issue is around right management. You'll end up managing accounts so I wonder if NIS+NFS for home directory isn't better for that matter, I know it looks like old fashion stuff, but it's quite robust. If you don't manage rights, then a simple share with rw access for every one should be enough.
Again, if you don't worry about right management, space sharing between users (you always have a small portion of users who are heavy consumers) then it is quite simple.
