<br>> one as a LAMP server which I can easily reinstall when something goes wrong <br><br>Forgot to mention: rather than re-install it's easier to make a snapshot of the disk image and just restore it - there's ways using LVM to make a snapshot of the logical volume for Xen, or VMWare has it's own set of easier to use tools to do the same thing in a gui.
