The PowerPC processors used in modern Macs are fully virtualisable (i.e.
it's impossible for the software running to tell that it's in a virtual
enviroment).  The x86 processors used in PCs aren't; VMware and plex86
have to do a lot of work behind the scenes to simulate this, hence their
complexity.
