Sorry the reply is a bit late - havent been checking this email account over easter ...
Speaking personally, Im in Wellington and get paid to look after Linux boxes (actually a bunch of FreeBSD boxes too). Im kinda in the ISP space so its services like email (MTAs and spam/virus gateways) proxy (squid) web (apache, php, mysql, cgi/perl) dns, radius, dhcp, firewalls (iptables, ipchains, ipfw, ) monitoring (rrdtool, mrtg, netsaint/nagios) billing, (netramet) backup (amanda, rsync), news and the like.
In terms of skills for this area (isp) being comfortable with the command line is the most important, all admin is done remotely via ssh, understanding networking at layers below 7 helps, some cisco exposure will help. Familiarity with vi(m) and perl will help a great deal.
In the ISP/internet area Linux is well established, in more general IT it is definitly growing, in areas that im not directly involved with suppotting, I have seen linux being used in these areas: clusters (for scientific computing), desktop (scattered individuals, but growing) databases/financial systems (people are starting to realise that oracle and the like can run on linux) web development, gateway devices.
So from my viewpoint - in the isp space linux is pretty pervasive - and I get paid to look after it :) In other areas its slowly growing more common and is starting to appear on peoples radar, I believe anyone intrested in getting into an IT job who has linux skills will have an advantage as managers have heard about it and have a "we must get round to looking into this linux stuff" attitude.
