Well for the Spam issue I would recomend you initially look to use
Spamassassin if it fits in with your setup. If you can run procmail
locally with your account then this will be very simple. I use it here and
it flags about 99% of spams sent. It is also very easy to setup and
minimal config required.

If you want to run a mail exchange on your home machine then you are going
to be in a world of pain with a dynamic IP address. Luckly I've got a
static IP address with Saturn so no such troubles:)

What you could do is reqister your domain with registerdirect.co.nz ...
they will handle DNS for you and any mail as part of the domain fee and
are excellent to deal with - stay clear of domainz.co.nz in my opinion.
