I have couple of friends running sid on dialup. Their apt sources point
to the security server in case any patches come out for the handful of
stable packages on their machine.
Every couple of months I burn some fresh CDs with the latest packages
and we use them as sources for an upgrade. Apt is pretty good about
holding things back if they'll break your setup; I've only ever had
issues with packages in experimental (such as the GNOME 2.6 packages I'm
testing).
