Another way to think about this is, instead of focusing on OOo training 
there could be more general sessions like "How to use a wordprocessor", 
by using OOo.

I used to do a lot of corporate training in the past.  I found that as 
much as I was teaching how to use Wordperfect Loyus 12, MS Office, 
Pegasus Mail etc I also tried to instill some thought as to formatting 
of documents etc.  The use of styles, not just CTRL-B to bold things was 
a biggee.  I found once people got a grasp on "good" (imho) techniques 
the shift to different apps was a lot easier.
