with partitioning, here's my rule.

ROOT: 2-5 GB (Depends on size of distro & amounts of apps you install)
SWAP: 1 GB   (You have so much space. Might as well make a large swap)
HOME: The rest of the space

The reason I like this so much, is that you can easily change, upgrade,
reinstall your distro, without wiping your home data each time. If you
have it all on 1 partition, you will have to copy the home data back
each time after the distro install - and if it's a few gig, it's going
to take a long time (over LAN or USB).

I don't have a boot partition, as I really don't see the need. With the
swap partition, since you have so much space, use a 1 GB swap.

For the filesystem, it's really up to your likes and system needs. I use
ext3, mainly because I've never used anything else & ext3 works well for
me.
