Probably because everything has to be loaded real-time off the CD.  Bear 
in mind that you can install Knoppix (or 'freeze' it as I like to say). 
  Once it is installed to disk it is very snappy indeed.

The Gentoo CD is good if you want something more advanced.  SuSE has a 
live CD as well if you'd like to try that.  Otherwise I think Knoppix is 
a good one to try.  It has about 2GB worth of software when uncompressed 
and it fits onto a 700MB CD.  Version 3.5 of Knoppix was a special DVD 
version which included tonnes more software, including GNOME.
