I used to think 8k @8bps was adequate sampling rate for speech.
Sometimes it is when everything else is perfect and you don't really
care about the quality. Now I have standardised on 22k05 @16bps.
If you can manage it with your laptop and probably a preamp, I would
strongly encourage the use of stereo as it will help pick the subject
out of background noise if it exists.

I regularly use Audacity to record 24 or more hours. At 22k05 16bspS
that takes about 4G.  One of these days I'll get my head around Linux
sound programming. Until then, Audacity is king.
