yes, I would like to keep the existing key.

but I think that the signatures I have gained, are signed against my
current email address (aka the UID).

I would like to know if when I delete that email address, if the
signatures will remain in the key?

I did a test (aka didn't save the changes) and it appears that if I
delete a UID, the signatures against that UID are deleted.
