I thought the NX Server was a Unix solution, and the client ran only a
standard RFB connection for Windows services?

There is no other program; both the KDE and GNOME tools are simple
front-ends to the underlying rdesktop tool.[1]
As to setting the window size: have you read the manual page yet?
rdesktop -g 1024x768 myhost
...or as I prefer:
rdesktop -g 1024x768 -x b -z -a 16 myhost
