If you do use the proprietary nvidia drivers, you have a choice between two X
servers or one X server across two screens (= Twinview).
A normal install of the driver sets up a man page with instructions.
Otherwise try:

These give you instructions on setting up dual display using either approach,
as well as discussing the pros & cons of doing it each way.
I believe the two X-server approach is pretty generic, & the instructions may
be useful for other drivers (such as nv) as well.
