Hello Rob

Main tools will be Cinelerra (the cvs branch), Kino for editing is very
easy. Cinelerra is more into correcting colors a bit like FCP I guess.
Cinelerra is a bit of a nightmare to build and packages are usually not
working. 
I you intend to do just cut/paste and a bit of subtitling etc... Kino
would the be the easiest way to proceed, it has a reliable firewire
acquisition interface etc..
For the encoding you can use ffmpeg or MJpegtools, the second is slower
but I believe better and very important : their mailing list is always
friendly.
