Thanks for your advice Edouard, Andrej and David.

To sum up:

* I'm not thinking of leaving for China :-)
* I'm not keen on running stuff that Debian won't
carry, which includes transcode and mjpegtools.

I might have a bit more of a dig around on the net for
hardware solutions.  

Ogg Theora, if they get it finished, will solve most
of my problems (no dvd decoding/encoding, but I have a
standalone DVD player for watching anyway).

Also, to clarify some earlier comments, I don't want
to rip encrypted dvds, just watch them.  And the avi
(mjpeg) vids I want to encode to mpeg/whatever are
just things I time-shifted off TV or recorded on my
digital camera.  Nothing illegal there I don't think!
