You can have DMA with SCSI-emulation, but you can't use hdparm. 
Instead, you do it like this:

echo "using_dma:1" > /proc/ide/hdc/settings

It works even when hdc is emulated with scd.

That said, the new interface sounds much better for a host of reasons.
